Does anyone here make their own pasta, any and all kinds? Do you have an appliance? Do you find it easy or do you find it a hassle?
I'm extremely interested in trying to make my own.

I make mine. I use the pasta attachment for my DLX. I like it. It is more work than taking it out of a box and plopping it in boiling water, but not too much more work. I use kamut to make my pasta.

Wow. So can you make the angel hair or fettucini, or spagetti, or whatever??Can you make your own lasagna? and those kinds of things? Your DLX sounds like a pretty must have machine!!!

it even makes macaroni! The only attachment I haven't seen for it is lasagna. I use a brown rice lasagna noodle by Tinkyada that I really like , so it hasn't been a problem

The DLX is a kitchen mixer with lots of nifty attachments. I got mine as an anniversary gift. It's one of those things you only buy one time in your life.(hopefully)

How do you make pasta by hand/ or otherwise without the DLX? (We do have the Bread Becker's wheat mill, but didn't get the DLX, nice though it looks. We do have other things that can extrude, though.) What type of wheat does it need?

As far as I know , you can use Kamut, Durum or spelt to make pasta. I have had brown rice pasta, but I don't know how to make it. Do you need a recipe. If you have the mill from Breadbeckers, you should have gotten their cookbook. There is a recipe for pasta in it. If you don't have it, I'll post it. Your extruder should work fine.

We do have a Breadbeckers recipe book, but I can't find one for pasta. It is a 1996 edition, in case that explains anything. So any more info would be appreciated, please.

I just got out my new Breadbeckers cookbook and there is NO pasta recipe. I'm off to dig up my old one. I know there's one in there because I use it!

found it!
In a food processor or whipping bowl, blend
3 large eggs 4 T water or any liquid 2 T oil 1 t salt
Stop mixer and add all at once 3 3/4 cups fresh milled kamut, durum or spelt
Mix flour just until crumbly and about the size of popped popcorn. Put through pasta extruder and drop into boiling water for about 2-4 minutes. Water should have 1 T salt and 1T oil in it.

Looks GREAT. Looks like a good use for eggs for those times when we have plenty. :)I'll copy out to show my parents and hopefully I can make it sometime soon (once we get the wheat)! Well... If they want to wait for that!!!
