Can you wonderful ladies please share some of your favorite gluten free recipes here? I have a friend that needs to make some changes and it would be nice to have some tried and true recipes that work.
Also , has anyone done this in a bread machine?

I have had my son on a gluten free/casein free diet for 5 years. I have tasted quite a few brands of gf foods and in my opinion there is no such thing as a decent loaf of bread. Not store bought, not hand homemade, not bread machine made, nothing. But, you can make really good muffins, cookies, waffles,pancakes, stuff like that. I can usually take any cookie recipe and replace the regular white flour with brown rice flour (that I grind myself with my vita mix). Same with most muffin recipes. My best muffin recipe is really easy with my vita mix and allows for flexability with flavors. It goes a little something like this:
Grind 2 different grains (rice, quinoa, oats if you can handle the small amount of gluten in them) enough to make 2 cups.
Mix flour in a large bowl with 1 T. baking powder, 1 t. salt, 1/2 t. baking soda.
In seperate bowl (or vita mix blender) mix thoroughly 1 egg, 1/4 cup of coconut oil, 1/4 cup honey, about 2 cups of some fruit (like a banana and a handful of prunes, or a can of pumpkin , some fruits are waterier than others so you may not need a full 2 cups) and may be about a cup of water.
Combine wet ingredients with dry ingredients. It shouldn't be stiff and crumbly, add more water till it stirs somewhat easily.
Bake in mini or regular muffin tins sprayed with something. 350 to may be 400 degrees for 15 to 20 minutes.
These are wheat free and do not need milk. They're pretty good for being healthy.
