I hope it's okay to ask my questions about co-op cheese on this board. I can't find another one that works as well. I got my price sheet from Morning Land and they list their cheese as *raw organic*, but in the Ozark co-op catalog, most of the raw cheeses are not listed as organic also. There is a new supplier in the Ozark catalog this month that has raw cheeses for sale at a price comparable to Morning Land and it would be much easier for me, at this point, to just order with my group from Ozark if the cheeses are similar. So my question - is *raw milk cheese* the same thing as *raw organic cheese* or is there some kind of difference?

raw just means unpasteurized and unhomogenized. low heat pasteurized means that it was heated a little to kill any pathogens (and enzymes that help it be digested) organic means that they are following organic standards and not using hormones or antibiotics. If they are certified organic, they usually scream it from the rooftops.

Well, my head is spinning. Does certified organic also mean "free-range"? Or could there be some meats/cheeses that are organic yet NOT "free-range"?
Is Morning Land Dairy certified organic? They don't mention that they're certified on their price sheet. Are their cheeses from free-range cows?
Tina, you need to move to Oklahoma and be my personal consultant. I have too many questions. There's just so much I don't understand but want to.
The main thing is I don't want to just blindly order from a co-op catalog because it is assumed that everything from a co-op is okay.

nope. Free range is a whole nother category. They are either in pens that are on wheels and rolled around the farm or they are pasteured. They may still be given antibiotics and hormones.
I believe that Morning land is organic. It is against the law to label organic if you are not.
Send me a ticket. I need a vacation. You cook right? ;D
