This recipe was modified from Serene Allison's Rejuvenate Your Life- in
my opinion an absolute must-have if you are interested in raw foods or
just in increasing the amount of raw food in your daily diet. Loads of
info and fun to read, too!
Terrific Tabouli
Place in bowl
4 bunches of flat leaf or Italian parsley processed in your food
processor
A few fresh handfuls of mint processed in the food processor
4 large tomatoes, diced finely
3 large cucumbers or 4 small ones diced finely
1 zucchini diced finely
One bunch of spring onions, diced finely
Throw in the mix at least ½ cup of your favorite olives, chopped
finely
A few small handfuls of dried mint
1 tablespoons sea salt
Crack plenty of fresh black pepper
4 cloves of garlic crushed
½ cup of squeezed lemon juice
Pour on ½ cup of extra virgin olive oil
Taste and adjust flavors. It should have a good zesty zing and a lemony
lick. Make sure you have it savory enough with a nice sea salt flavor.
Optional- Add 2 cups of sprouted quinoa to the mix. Adjust the flavors
because the grain may soak up some of the dressing.

and Walnut Hemp Crackers(also made with zucchini)- a real tingler for
you taste buds!
