If your goal is to eat more fresh veggies, this is a great way to do it... This is my absolute favorite hummus recipe. Be sure to blend it up and adjust flavors to your personal taste. So yummy and wonderful served with veggie crudites and fresh tabouli. Hope you enjoy it as much as I do, Kristi Fresh Zucchini Hummus 2 zucchini, peeled and chopped ½ c tahini ½ c lemon juice ¼ c olive oil 3 cloves garlic 1 ½ t sea salt ½ T cumin, or more if desired Dash of cayenne pepper, if desired Place all ingredient in blender and blend until smooth. Taste and adjust flavors. Sometimes more salt and/or lemon juice are necessary. I like mine with lots of cumin! Serve with cucumber slices, pepper chunks, grape / cherry tomatoes, carrot/ celery sticks, broccoli/ cauliflower florets, pea pods. Etc. for dipping. Apples are great with this too…Mmmm! Mmm! Good! Note: For a more mellow, roasted garlic flavor, you can place garlic in the dehydrator overnight and then add to the hummus.

I tried this recipe today.wonderful flavor. But it was a little to watery. Do I need to run it in the food processor more?

Not sure about that- but I know it can be watery depending on the size and water content of the zucchini, you could add a bit more tahini to thicken it. I also notice that it thickens the longer it sits. I sometimes make it a day ahead and let it thicken overnight. Glad you enjoy the flavor.
