I went to a scrapbooking party and one of the ladies brought these along to share. They were delicious! A good use for your virgin coconut oil!

Coconutty Fudge - from Eat Fat, Lose Fat by Mary Enig & Sally Fallon makes about 2 dozen small squares (or more if cut smaller) 188 calories per square
2 cups crispy almonds 1 cup virgin coconut oil, softened (or melted) 1 cup raw honey 1 cup cocoa* or carob powder 2 tsps chocolate extract (if using carob powder) 1 tsp vanilla extract 1/2 tsp salt
Place all ingredients in a food processor and process until well blended. Line a large loaf pan (or baking sheet w/ edges) w/ parchment paper and spread mixture about 1/2 inch thick (thinner is fine too). Wrap up in parchment paper and refrigerate several hours (or overnight). Cut into small squares and store in an airtight container in the frige (or freezer).

Those sound awesome! Do you think perhaps I could substitute oats for the almonds? I have a child with severe nut allergies.

I have before.
In a pinch I've done ground oat flour, coconut oil, honey, and Carob powder. The Oats and oil bind really well...and will harden to a cool chewy candy in the fridge.
