discovered i can NOT eat it straight out of the jar..its just too greasy feeling for my mouth. so i put it in a low carb/no sugar shake and it tasted wonderful. now to figure out other things to do with it. i can put it in my yogurt at bfast, or oatmeal, but i dont have those every morning. and how much should i eat a day? i did a teaspoon with my shake.

It should get less oily as you get down into the jar. Let me get my coconut oil book and see what I can find for you

Ack! It's leant out! I need to get it back . How about spreading it on crackers? I am drinking a fruit smoothie with it in there right now. Let me think on it tonight and I'll get back to you with some ideas.
You should work up to three tsp per day. There are recipes on the coconut oil site also
How were your sugars today?

not too bad, they are high right now, but i had a piece of pizza. i stayed within the limit for carbs, but pizza will take it up. but its not as high as it usualy goes no crackers...they will raise my sugars..i can do the smoothie and i can do the oatmeal for bfast, but there are days i wont have that. for now i just cant see eating it by the tsp you know? just too oily for me yet. but it was delicious mixed in my smoothie. i was thinking...this needs some chocolate

Me and my kids don't like to eat straight coconut oil either. My 2 year old actually throws up when she has tried eating it plain. Putting it in smoothies just ruins the taste of the smoothie for me. Luckily I have found a delicious way of snacking on it that we all enjoy.
Grind 3 cups of almonds as fine as possible.
In seperate bowl mix thoroughly 1 cup honey with 1 cup coconut oil. Then mix in 1 cup protein powder.
Stir almonds into coconut oil mixture. Shape into balls and set up in fridge.
These balls will have to be stored in the fridge since the oil will cause them to soften.

thanks for the recipe, but i cant have honey..it raises my blood sugars too high. sounds really good though!

Dulcie, I know your sugars are really sensitive, so I am hesitant to even mention this, BUT I wanted to let you know that Sage and Tupelo honey actually regulate levulose just in case you haven't tried those two yet.

ive never even heard of them lol. seriously i have had it with my sugars. at this point absolutely nothing is working.
