I have a feeling I know the answer, but would any of you make ice cream using a recipe with raw eggs? My friend with the cow ;D says she has a great recipe for ice cream, but it uses raw eggs (you don't heat it up before putting it in the i.c. maker). It just makes me nervous.
If I just left out the eggs, would it make a h u g e difference in the consistency of the ice cream?

okay this is from me and i am NO EXPERT but am freak when it comes to organisms, etc in my food, LOL...Up until a few years ago, i NEVER made ice cream with raw eggs in it, would either do the recipe that calls for heavy cream and half and half, but no eggs or the ones where you heated it up...they were okay and pretty tasty, but then dh's cousin started raising her own chickens and i got farm fresh eggs from her and i used them in ice cream and oh man! you wouldn't believe the taste difference...i was really skeptical because dh grew up with the raw egg ice cream and thought mine was just a waste of money because it "didn't taste right", LOL....i can see where he was coming from...the richness and creaminess for some reason is lost...
If i were you, i would use them from a farm that i knew of....i would NOT use store bought eggs, even the organic kind...i would use from a friend....now you're making me hungry for some homemade banana nut ice cream!!!! Oh, when/if you make it, throw in there some chopped strawberries or bananas and some nuts....you will love it!
Also, make it ahead of time and stick the cannister in the freezer to make it good and solid by the time you want to eat it.

I agree about the eggs - if you know they are from a good farm, I see nothing wrong with using them raw. Also, wouldn't the freezing help some, anyway? About the icecream, you've made me want to try it! Once we have eggs come spring and milk/cream.

Thank you both. I DO have a source (friend) for *home-grown* eggs. I think I'll give it a try!
