I am a pastor's wife and our church will be in revival this week. Our evangelist is a diabetic. I am having a very hard time coming up with a menu mostly because I just cook without thinking about calories, sugars, etc. So.... after stewing, fretting, crying,etc over this I kinda decided to just cook like a typically would but have low/no sugar desserts, etc. Here's my menu. Is it terribly incompatible to a diabetic's lifestyle? Thurs: Main meal - chicken kelly (chkn breast cubed with swiss cheese basically), bkd potatoes, tossed salad, 2 different veggies supper - chicken noodle soup (homemade) veggie tray, fresh fruit tray, popcorn Firday: Main meal - chili tacos(chili over either rice or taco chips layered with lettuce, tomoatoes, sour cream or whatever one wants) supper - BBQ beef sandwhiches (I figured he could just use one piece of bread?) Saturday: main meal - pork roast, mashed potatoes, beets, cole slaw supper - stuffed peppers Sunday Main meal - swiss chkn casserole, cheesy potatoe casserole, veggies, waldorff salad supper - leftovers (not very elaborate ) I plan to have plenty of fresh veggies and fruit on the table at each meal. I am also interested in a few tasty low sugar desserts. TIA!!

Hi Julie, I just saw this. How is it going? I have a cranberry salad recipe that goes over pretty well. Let me know if you still need it.

Well, the weekend went Ok, I guess. He got the flu so I didnt' have to cook him meals Sat night or all day SUnday. He SAID that everything I fixed was "diabetic friendly" and he certainly seemed to enjoy what he did eat. I don't know. I just hope he is sick with the flu, not with something I did wrong cooking.
