What do you all put on your pancakes? I've decided I really don't want to buy anymore pancake syrup from the store. I did buy some pure maple syrup, but it's pure sugar, of course. And it's expensive. Can't use too much of it at a time. I thought about mixing some maple syrup with butter and honey and microwaving it all together. A great sugar high! Any other ideas? Paula

1 cup water 2 cups sucanat
Bring to a boil and cook until thick (about 20 minutes)
Then add 1 T maple or vanilla flavoring (we use vanilla)
We love this syrup . It will crystalize in the fridge, so store it in something that you can heat it up in.

Pure maple syrup.
Lately I have been making an awesome strawberry syrup. We went strawberry picking a few months ago and I have a ton in my freezer. When they thaw they get all mushy and syrupy. I just heat them up and add some maple syrup to sweeten. Yum!

Most of the time we use real maple syrup, made by my dad. :)OOH...what a luxury! He's been syruping for the last 10 years.
I've also used the "juice" from a can of Wyman's blueberries to make a blueberry syrup. (Very sweet stuff, it must have a bit of corn syrup in it.)
Great idea on the sucanat/water/flavoring, Tina. I may have to try that. We didn't get much syrup this year as the weather turned warm and stayed warm. (It needs to get warm, then cold again for the sap to run.)

My kids like maple syrup (no, I don't buy the real stuff yet... baby steps!), but I love blueberries on my pancakes. A couple years ago, I attempted to make blueberry jam from fresh-picked blueberries here in Michigan.... and it never "jelled". So - I've got PINTS and PINTS of "blueberry topping" put up in my pantry. It's my pancake syrup and cheesecake/tart topper, and ice cream topper. It will take me forever to use it all! I was very ambitious in my berry picking/jam making endeavor, only to have NONE of the jams set!
I do have sucanat in the cupboard - I may just try Tina's recipe.

LOL Marcia! I haven't even mentioned that he occasionally catches walleye for us.... ;D I can't leave their house without him offering some sort of food for me to take home. My dad's an awesome man! I could go on for days about him. In college, I had to write a paper about someone I considered my hero and role model. I chose my dad.
