This seems so familiar, is it in a SG cookbook? I have to move those cookbooks to a more convenient spot. They got stashed in a back cupboard after DD1 starting all this cake decorating stuff. (Oooh, I know! It's bad, bad, bad. But she's making a bit of $$ with that endeavor.) Also, I've got some flaxseed that I was using in little spa wrap thingys. Eye pillow and neckwrap sort of things. The flaxseed has been in my cupboard for oh say ......6 - 8 months. Does it have a shelf life?

the flax seed should still be fine. You will find the cookie recipe at www.breadbeckers .com They are wonderful! I put coconut flakes in mine.

my boys and I agree! they absolutely LOVE these cookies.. I put walnuts in ours and carob chips... check out the taste of health guest book for our story

hmm these sound good..where is the recipe? lol. i think i may put some coconut in them hmm trying to get 3tsp of coconut a day that way would be hard though.

1 cup Butter 1 cup Sucanat w/ Honey 1 cup Sucanat 2 Eggs 1 teaspoon Vanilla 2 cups fresh Hard White Wheat Flour 1 cup Oatmeal ½ cup milled Flax Seed 1 teaspoon Baking Soda 1 teaspoon Baking Powder ½ teaspoon salt 1 ½ cups Almonds, chopped 2 cups Chocolate Chips (optional) Preheat oven to 3500.
Cream butter, Sucanat, and Sucanat w/Honey making a grainy paste. Add eggs and vanilla and beat well. Mix dry ingredients and stir into creamed mixture. Add almonds and Chocolate chips. Make into 1" balls and place on ungreased cookie sheet 2" apart.
Bake at 350 degrees for 10 minutes.
Makes about 5 dozen cookies.
Our Favorite Chocolate Chip Variation
Use 3 ½ cups fresh Soft White Wheat Flour. Omit Oatmeal. Use 1 ½ cups of Shredded Unsweetened Coconut in place of chopped almonds. Use 2 cups of Chocolate Chips (or more) Mix as directed in above recipe. My husband gets tired of oatmeal cookies so this has become our favorite cookie recipe. - Ashley McCord

substitute the date sugar for both sucanats and the oat flour for the whole wheat flour or you could use whole wheat flour...Any questions, just ask.

what is sucanet? im assuming its a sugar substitute of some sort since i can replace it with date sugar.
since i can add coconut...what about the concentrate? hmmm..think im going to do a bit of expermenting tomorrow lol. then figure out if they will bother my blood sugars or not..hopefully not because they will have flax seed and coconut lol.
and im feeling about wee small right now. i dont know much about anything lol

Sucanat is dried cane juice. It will definitely drive your sugars up, so don't use it. Let me know how the experimenting goes. If it were me, I would use some coconut concentrate in place of some of the butter since it is so oily. Otherwise you will get flat cookies
