I came across a recipe for stewed tomatoes just the other day. Thought I might share it after noticing the posts about aluminum. I haven't tried this yet, but it sounds like it might be a good alternative to "store-bought".
6 large tomatoes, peeled 2 tablespoons minced onion 2 tablespoons minced green pepper 2 tablespoons butter or vegetable oil 1/2 teaspoon honey
Cut tomatoes into wedges.
In a medium saucepan, saute onions and green peppers in butter or oil until slightly soft. Add tomatoes and honey, cover and cook over medium heat for 10 to 20 minutes.

Thanks! I'll have to order a case of organic tomatoes from our co-op and freeze some of those!
