Well, we tried a new one this week and the kids liked it so much I barely got any... boo! hoo!
I am just giving the basics here... if anyone wants to try this and needs more info, just ask...
Steam the spaghetti squash just until you are able to scrape the strings out... they should still be a little bit crispy. I slice it in half length wise, scrape the seeds out, and place it open side down in a pan with an inch or so of water and then bake it at 350 for about 45 minutes.
While the squash was steaming, we mixed together chopped tomatoes, chopped fresh basil, a little garlic powder, a sprinkle of salt and pepper, and a little olive oil and mixed well. Then we added small cubes of raw goat cheese and let it rest on the counter at room temperature until time to serve.
Serve sauce over spaghetti squash.
We served this with a large tossed salad, and Better Than Red Lobster Biscuits. If anyone want that recipe, just ask.
By the way, this was served alongside regular pasta and sauce and the family scarfed up the other!

Better Than Red Lobster Biscuits
2c freshly milled soft white wheat 2t baking powder 1/2t salt 1/2t baking soda 5T butter 2T mayo 3/4c plain yogurt 1/2c cheddar cheese
Mix dry ingredients. Cream in butter. Stir in may and yogurt. Add cheddar cheese and mix well. Drop by spoonfuls onto cookie sheet and bake at 350 for 8-10 min or til golden. Brush with melted butter and garlic. I sprinkle mine with a little parsley, too.
