I am going to make some gingered carrots, a la Nourishing Traditions, and I'm wondering how you serve them. Do you eat them raw/cold? Or do you heat them?
I know this is probably a dumb question, but I am completely new to this way of eating.

Hi. No question is dumb. We all have to start somewhere. You don't want to heat the carrots or any of the fermented condiments because you will kill the helpful enzymes that live in them. So, we just eat them as a condiment on our plates. About two tablespoons is all that you need.

I'll jump in here and give my 2 cents. I spose as with all foods, it's a matter of taste/preference. Personally I do not care for the gingered carrots, but not because they're fermented, it's the taste. I really like the fermented sauerkraut and the kimchi though!

My favorites are sauerkraut and kimchi as well. The gingered carrots are good , but they are a bit mild for my tastes.
