Okay, I have gotten started with some of the fermented foods. I have a jar of ginger carrots and a pitcher of ginger ale (a la Nourishing Traditions) fermenting on my counter. I also made my first batch of homemade yogurt, and am going to buy some kefir starter to make my own kefir, as DD and I love the stuff. ;D (we've been buying it premade at the health food store)
Anyway, most of the recipes say to put the ingredients into glass containers. I was wondering if it "mattered" if I put them into plastic, as that's mostly what I have and don't have the money to buy a whole case/box of canning jars at the moment. Does plastic somehow affect the outcome of the fermenting, or is glass just a "preference"?

You will eventually want to get glass because of the xenoestrogens leaching from the plastic into your food. It negates everything healthy that you are doing. So, use what you have for now and replace as you have the money. Walmart and Dollar General have great prices on glass storage.
