Now that I have my carrots fermenting, I'm wondering how long I should wait to start eating them. The recipe said wait 3 days before refrigerating. Are they good to eat at that point, or should I wait longer? Also, how long do they "last"? Sorry for so many questions. I'm totally new to this, and in some areas NT is not explanatory enough for me.

You can eat them after 3 days. The ginger carrots don't seem to last as long in the fridge, so eat them pretty quickly.
