Terrific Tabouli
4 bunches of flat leaf parsley whizzed in the food processor a few handfuls of fresh mint or as much as you can get your hands on whizzed in the food processor 4 large tomatoes diced finely (save juice for later or drink) 3 large cucumbers diced finely 1 zucchini diced finely one bunch spring onions diced finely throw in the mix at least 1/2 cup of your favorite olives chopped finely A few small handfuls of dried mint (rub it between your hands to make it fall nicely in the salad) 1 TBS sea salt crack plenty of fresh black pepper 4 cloves fresh garlic , crushed 1/2 cup squeezed lemon juice pour on 1/2 cup extra virgin olive oil Taste and adjust flavors. It should have a zesty zing and a lemony lick. Make sure you have it savory enough with a nice sea salt flavor.
ETA- I throw in 2 cups of sprouted quinoa here

These are the recipes from Women's Ministry last week. Colorful Cabbage Finely chopped one medium sized red cabbage Finely chopped one medium sized green cabbage Two to three apples cubed (preferably crisp tart ones) A few good splashes of raw apple cider vinegar (1/2 cup) 1/2 cup extra virgin olive oil Crack some good rounds of fresh black pepper 1 Tbs sea salt 3Tbs poppy seed 1/4 cup maple syrup a handful or two of walnuts Chop the cabbage by hand. Throw in everything else. Mix around a few times. Taste and adjust flavors. It should have a sweet edge with a vinegary and zesty tang. Perfect Parsnip 1 big fat parsnip, grated Add florets of two heads of broccoli, cut small 3 good stalks of celery, diced lace with a small handful of fresh oregano 4 generous overflowing Tbs cold pressed flax seed oil 1 tsp sea salt to taste 1/2tsp garlic powder to taste a sprinkle of onion powder crack a few rounds of fresh black pepper 3 laden and overflowing Tbs of balsmic vinegar put it all together and stir it up. This week will be Great Guac and Green and Sunny Fettuccine (made from raw collards).
