1 bunch collards
lay the collards flat on a cutting board and cut out the stem. when all stems are removed place them al together with the arc of the leaves all facing the same way. Put the largest leaf on the bottom and roll into a tight sausage. Slice ultra thin with a knife. This will make collard ribbons.
1 bunch parsley. Chop finely in food processor 2 packed handfuls of mint diced 1 avocado sliced 1 handful of raisins 1handful of raw pistachios ( I use walnuts) A few good turns of the pepper grinder a pinch or two of sea salt 2 small handfuls of nutritional yeast ( I used parmesan cheese) Toss and drench in If the Sun Was Green dressing
