Sesame “Noodles”
(Ellen Oberlin) Serves 4 to 6.
2 lbs Zucchini, cut with 2 x 2 julienne disc
Cut in fp. Remove and empty into large bowl.
1-1/2 t minced fresh Ginger
2 cloves Garlic, pressed
½ cup raw Tahini
3 T Nama Shoyu
Puree in food processor.
2 T Rice Vinegar
1 T Honey
1 t Toasted Sesame Oil
1/8 t Hot Chili Oil
1 T Water
Add and process until well mixed. Add to zucchini and mix thoroughly.
2 T Sesame Seeds
Stir into zucchini mixture.
3 to 6 Scallions, finely chopped
Stir some into zucchini if desired and top with plenty. This makes the dish. Don’t leave these out!
Onion Bread
(Based on a recipe from RAWVolution, by Matt Amsden) Makes 32 triangular pieces.
½ lb Yellow Onions
1 cup Sunflower Seeds, soaked 1 hour (5 oz)
¼ cup Nama Shoyu
¼ cup Olive Oil
Process in fp until smooth. Remove to large bowl.
½ lb Yellow Onions, sliced in fp on 1 mm disc then with “S” blade to make finer.
Add remaining onions and mix well.
1 cup Flax Seeds (6 oz)
Grind in V-M or coffee grinder. Mix in thoroughly.
Spread mix over a Teflex sheet.
Dehydrate at 105 degrees about 6 hours then flip.
Dry 6 to 12 more hours then cut into desired shapes and sizes. I cut the sheet into 16 squares, and then cut each diagonally in half to make 32 triangles total.
Dry 6 to 12 hours more until desired texture.
Variations: Grind ¼ cup sesame seeds in coffee grinder and add to batter before drying with additional seeds sprinkled on top and patted into batter. Or, stir in 4 T poppy seeds into batter before drying.
Kids’ Favorite Cole Slaw

10 to 12 cups Green Cabbage, sliced with 1 mm disc
1-1/2 to 2 cups Carrots, shredded with fine shred disc
1/3 cup Raisins
¼ of a medium Red Onion, minced
1-1/2 t Caraway Seeds
1-1/2 t Sea Salt
Combine all in a large bowl and toss.
Lemon Tahini Dressing
(Julie Disser) Makes 1 cup. This is ½ the original recipe.
½ cup Olive Oil
¼ cup Water
8 t Lemon Juice
4 t Nama Shoyu (was 3 T tamari)
1 cloves Garlic (was 2)
1 Date, pitted
Combine in Vita-Mix and blend on high until creamy.
¼ cup Sesame Seeds
Add and blend until creamy.
Add to cole slaw ingredients and mix well.
