I was sent this recipe by Julie Disser. We wanted to make it for the raw
food pot luck, but I wanted to practice before serving it to all of you. All
I can say is yum! It is actually a bit sweet for me, but Jesse and the boys
loved it!
These are the changes I made:
I lost the vanilla beans I bought. I actually think that they may have been
thrown away which was an expensive mistake ,but nonetheless, I used liquid
vanilla instead of vanilla powder and it turned out fine.
Also, I did soak my nuts, but this recipe would work with regular raw nuts
if some of you are not yet comfortable with soaking. It's definitely worth
trying. I think it's much better than cooked apple pie!

Apple Pie:
1 crust
6 fugi apples peeled and cored
1 tsp Celtic Sea Salt
2 tsp cinnamon
4 - 6 medjool dates, pits removed
1 tsp vanilla powder
1 cup raisins
2 tsp golden flax seed, ground fine
To prepare:
Prepare pie crust as noted below. Place 2 of the cut up apples, and all of
the salt, cinnamon, dates and vanilla powder into the food processor and
process until mixture is almost the consistency of applesauce. Continue
adding apples, processing only until apples are chopped into small to medium
sized pieces. (Having different sized pieces of apple are important to the
texture of the pie.) Place the chunky mixture in a large bowl. Add the
raisins. Stir in ground flax seeds. Let the mixture sit for about 15
minutes as the raisins and flax seeds soak up the juice from the apples.
Place mixture in pie crust. May top pie with crushed walnuts.
Crust:
1 cup almonds, soaked 12 hours, drained and dehydrated for 12 hours
1 cup pecans, soaked 12 hours, drained and dehydrated for 12 hours
1 cup walnuts, soaked 12 hours, drained and dehydrated for 12 hours
1 ½ cups medjool dates, pits removed
½ tsp Celtic Sea Salt
1 tsp vanilla powder (recipe below)
Place almonds in food processor and process until mixture resembles flour.
Add slat and vanilla to the mixture. Add the pecans, walnuts and dates and
process just until well mixed. Press mixture into an 8 - 10 inch glass pie
pan.
Vanilla Powder:
5 vanilla beans
½ cup buckwheat
Place the vanilla beans and buckwheat in a Vita-Mix (dry pitcher) or seed
grinder and grind to a powder. Place in an airtight container in the
refrigerator. Will keep for a couple of months (or maybe more.)
