I have a recipe for French Bread sandwich rolls that calls for 1/3 C of gluten flour AND 8 Cups of whole wheat flour.
What is gluten flour? Is it soft white wheat?

Gluten is actually extracted from the wheat. It can cause some intestinal problems, so use caution. I use Dough enhancer instead.

Dough enhancer is an additive that you can put into your dough to make it nice and fluffy. It is yeast, vitamin C, tofu and a few other harmless ingredients. IMO, much better for the gut than gluten.
